What to do with black bananas? Banana bread!
Ever got to the end of the week just to realize that you forgot all about those green bananas you got last weekend and they turned all black? Fear not: this is their optimal ripeness for this healthy honey banana bread.
Recipe: Honey Banana Bread
Summary: Ripe bananas are turned into heavenly delight with minimum labor and minimum time, just mix and bake!
Ingredients
- 3 ripe Bananas
- ¾ cup Honey
- ¼ cup Butter, melted
- 2 Eggs
- 1½ cup Whole Wheat Flour
- 1 tsp Baking Soda
- ½ tsp Salt
Instructions
- Preheat oven to 350ºF.
- Mash bananas
- Add honey and melted butter. Mix.
- Add all ingredients and mix till fully combined. You will end up with a very runny mix.
- Pour into an oiled bread pan and bake for 45 to 55 minutes, till top is nice and brown, and a toothpick comes out almost dry.
Quick Notes
- Black, over-ripe bananas are the best bananas for this recipe: they are at the peak of their sweetness, and along with the honey the outcome is simply divine
- This bread keeps nice and moist for several days when kept properly covered
Variations
Feel free to add craisins, raisins, chocolate chips, pecans and\or California nuts to the mix before baking. Up to 1 cup does not require any recipe changes.
