Place a blenched asparagus spear in the shooter glass for that WOW factor!<\/em> <\/p>\n<p><\/p>\n<fieldset class=\"hrecipe recipe\">\n<legend class=\"fn\">Recipe: <a class=\"url\" href=\"https:\/\/palettedome.com\/cuisine\/2012\/07\/15\/chilled-asparagus-soup\/\">Chilled Asparagus Soup<\/a><\/legend>\n<p><\/p>\n<div class=\"ingredients\">\n<h4 class=\"ingredients\">Ingredients<\/h4>\n<ul class=\"ingredients NoBullet\">\n<li class=\"ingredient\">1 lb fresh asparagus, washed and coarsely cut<\/li>\n<li class=\"ingredient\">1 leek, washed, white part only, coarsely chopped<\/li>\n<li class=\"ingredient\">1 medium shallot, coarsely chopped<\/li>\n<li class=\"ingredient\">1 medium potato, peeled and coarsely chopped<\/li>\n<li class=\"ingredient\">1 bag fresh spinach (10 to 12 oz)<\/li>\n<li class=\"ingredient\">6 cups chicken or vegetable stock<\/li>\n<li class=\"ingredient\">2 Tbsp olive oil<\/li>\n<li class=\"ingredient\">Salt and Pepper to tast<\/li>\n<li class=\"ingredient\">1 tsp rosemary infused olive oil, for garnish<\/li>\n<\/ul>\n<\/div>\n<div class=\"instructions\">\n<h4 class=\"instructions\">Instructions<\/h4>\n<ol class=\"instructions\">\n<li>In a large pot over medium-low heat saute leeks and shallots in olive oil. <\/li>\n<li>Stir occasionally, until translucent, about 10 minutes.<\/li>\n<li>Add asparagus and saute until asparagus is bright green and softer, 5 &#8211; 6 minutes.<\/li>\n<li>Add stock and potato, increase heat to medium and bring to a slow boil. <\/li>\n<li>Adjust heat to simmer, and cook until potato is tender enough to fork without applying too much pressure, yet not too mushy, about 10 minutes from boiling.<\/li>\n<li>Add spinach and cook while stirring until spinach is wilted and bright green. About 1 minute (for baby spinach. mature spinach will take a bit longer).<\/li>\n<li>Mix in salt and pepper and cool the mixture.<\/li>\n<li>With a food processor, blender or hand mixer puree till very smooth. <\/li>\n<li>Strain with a fine sieve over a storage container .<\/li>\n<li>Chill over night or at least 4 hours before serving.<\/li>\n<li>When serving, garnish with a light drizzle of rosemary infused olive oil. <\/li>\n<\/ol>\n<\/div>\n<div class=\"quicknotes\">\n<h4 class=\"quicknotes\">Quick Notes<\/h4>\n<ul class=\"quicknotes\">\n<li>Great for party planning: can be made the night before.<\/li>\n<li>Don&#8217;t skip the spinach! It gives the soup its lively green color, unlike the  tired &#8216;overcooked asparagus&#8217; color.<\/li>\n<li>I love pureeing this soup in a Vitamix.
