it is about what you have in your pantry and refrigerator, and how fast you want to get warm. You can complicate it some with more exotic ingredients, but when it is 1&deg;F, I don&#8217;t venture to the supermarket, and just use what I have in the house.<\/p>\n<p>The basic ingredients include celery, carrots, onion(s), parsley. For the noodles I like to use egg or rice noodles. Just chop the vegetables (I like pea size pieces), place in a medium casserole with chicken stock, and bring to a boil over high heat. Simmer for 10 to 30 minutes, add your noodles, and simmer for 10 minutes more. Check that the noodles are soft enough to your liking &#8211; and you are done! It does not get any easier than that.<br \/>\n<small><br \/>\nSome side notes:<\/p>\n<ul>\n<li>Start with 2 cups stock. Chop the veggies you like in. If the veggies &#8220;overwhelm&#8221; the stock, add some more stock&#8230;<\/li>\n<li>I usually use 1 carrot, 2-3 celery stocks, 1 onion, a bunch of parsley, some mushrooms if I have them in the fridge.<\/li>\n<li>Corn is a nice addition, as are frozen peas, green beans, zucchini, cherry tomatoes etc. More involved versions will include celery root, parsnips, even potatoes. Your imagination will determine the outcome, just adjust the boiling times for hardier ingredients<\/li>\n<li>If you choose to use garlic, sparingly please! It can take over all other flavors quite easily<\/li>\n<li>I use my homemade chicken stock that I prepare in batches on a weekly basis. Feel free to use any liquid or powder stock you like. And if you do not have any in your pantry, time to get some!<\/li>\n<li>Want to upgrade even more? Add some white wine when adding the noodles.<\/li>\n<li>I use minimal amounts of salt and pepper as my stock is fully seasoned.
