Zucchini carpaccio is a new addition to our summer and fall shared appetizers menu.

Thinly sliced Zucchini is salt sweated for an hour to drain liquids, wiped to get rid of the salt, then arranged on a platter with olive oil, lemon juice, parmesan cheese, goat cheese, mint or other herbs, and pistachios or other nuts.

It does take time, and it should be enjoyed fresh, but it is an amazing dish that is worth the effort!
