Spring is definitely here, last frost is long gone, and it almost feels like summer: It is time to plant your herbs! Even with poor soil, limited space or window boxes, with enough sun and plenty water your herbs will grow like weeds.
Herbs are a great addition to any dish, and fresh herbs, added at the right time, make a dish shine. A simple roasted eggplant becomes an amazing appetizer when roasted with pesto sauce on top. Add fresh chives to your cream-cheese bagel, and breakfast is not so boring anymore. Add some mint and basil leafs to your next green Salad. Use fresh thyme or Rosemary, or both, when roasting chicken next. The list is simply endless.
For a limited space, I would recommend sticking with some basics: all you need is sun, plenty water, and the herbs will do the rest. My MUST HAVE list includes Sweet Basil, Parsley, Rosemary, Thyme and Mint. Important yet take second seat are Chives, Oregano, Sage, Cilantro and Dill. If you have the space, try some Thai Basil, Tarragon, Savory, Marjoram, Lemon Grass, Chamomile, Lemon Verbena, Bee Balm, Lemon Balm etc.
