Summer is fading out. We decided to share some of the summer culinary adventures of our Palette Dome Cuisine extended family. To begin the series, here is Mimi’s Italian adventure: fish in crazy water.
Who knew that pesce acqua pazza style was fish in crazy water, a Sorrento specialty? This was one of the delicious but simple dishes we made and devoured during a weeklong cooking class in Agata sui due Golfi, a small village high in the hills above Sorrento. We stayed at a lovely boutique hotel, Oasi Olimpia Relais, which has both a cooking school and lovely accommodations overlooking the Bay of Naples with spectacular views of Mount Vesuvius. In addition to four cooking classes with Chef Carmen Mazzola, the week included visits to local cheese, olive oil and pasta makers with excursions to Capri, Pompeii and the lovely towns of the Amalfi coast, strung out on the spectacular drive south. We also were treated to an amazing dinner at Quattro Passi, a two star Michelin restaurants in nearby Nerano. We booked our cooking vacation with The International Kitchen , a Chicago based company which was attentive and comprehensive in their arrangements and responsiveness.
