Quick Coconut Macaroons

summary: For the new year, a fun easy sweet bite, and these are really as easy as they come: 6 ingredients, mix, form, bake – DONE!!!

Recipe: Coconut Macaroons

Ingredients

  • 2½ cups Coconut flakes
  • ½ cup Sugar
  • 2 Tbsp Chocolate flakes
  • 1/8 tsp Salt
  • 1 tsp Vanilla extract
  • 2 Egg Whites

Instructions

  1. Preheat oven to 340°F (170°C).
  2. Line a cookie sheet with baking paper or silicone mat.
  3. Mix together dry ingredients, making sure the coconut does not clump.
  4. Add egg whites and vanilla extract. Mix well with a wooden\silicone spoon.
  5. Form bite size, about 1″ diameter, balls with your hands and place on lined cookie sheet.
  6. Bake for 17 to 20 minutes, until lightly golden.
  7. Turn off oven and leave in oven for 10 more minutes, till deeper gold.
  8. Take macaroons out of oven and let cool before moving to a storage container.
  9. Store in airtight container in separated layers.

Quick Notes

  • Great for a quick sweet byte with coffee \ tea \ alcohol.
  • This recipe is easily doubled to a standard coconut flakes package, 4 egg whites, and just make sure you do not over do it with the sugar – I use only 3/4 cup when doubling.
  • Going to a house party? These are an easy and great gift to bring along!

Variations

  • With holiday season and the abundance of chocolate gifts, I like using chocolate flakes I make from flavored bonbons.
  • You can form bigger macaroons, just make sure you bake them a bit longer.
